Chicken Broth is a FREE Food and makes a great in-between meal snack. It’s good alone, but to spice it up, this recipe is wonderful! It tastes like you're eating a fancy soup in a high-end Thai restaurant. I keep a piece of fresh frozen ginger in my freezer. That way when I need it, I can pull it out and shave off very thin frozen pieces, or grate it with a small grater. IMHO, it's just as good as fresh!
Ginger Mushroom Chicken Broth
- One 8 oz container Pacific Natural Chicken Broth (I use organic)
- 1/2 cup sliced mushrooms
- 1/8 Tsp Sesame Oil - a.k.a. a "dash" (This tiny amount is just for flavor and is insignificant in your daily oil total)
- 1/2 tsp fresh grated ginger
- 1/2 tsp sea salt (I like mine salty, but you may use a little less)
Add all ingredients into a microwaveable mug and heat for 2-3 minutes (time will vary depending on the microwave). This cooks the mushrooms & ginger till tender, and blends all the flavors through the soup. The ginger, if grated or sliced finely enough, is edible and delicious - and VERY good for you. Great to make ahead raw in a tupperware bowl and bring to work to nuke later!
