IP Potato Rolls

1 Package IP Potato Puree
1 Egg Whites
½ tsp Baking Powder
1/8 tsp Baking Soda
Olive Oil Spray

Preheat oven to 390°F. Beat egg whites until foamy, but not stiff. Add Potato Puree mix, baking powder, and baking soda. Mix well. Batter should be medium thick. Spray cupcake pan with olive oil. Spoon batter into cupcake pan ½ to ¾ full. (Makes 5 good sized rolls.) Spray tops with olive oil. Bake 7 to 12 minutes. Rolls should rise and brown a bit. Do not overcook or rolls may crumble or become “papery.”Optional: add herbs and spices such as rosemary and garlic.
