This is a savory, surprisingly satisfying way to approximate potatoes. Cauliflower is fairly neutral flavor-wise, and the texture is awesome.
- 2 cups frozen cauliflower
- 1 large shallot (or 2 tbs chopped onion or chives works, too)
- 2 TBS Chicken Bone Broth (Pacific - order on Amazon), or water if you don't have broth
- Sea Salt & pepper
Cook cauliflower and shallot together (microwave or steam) until tender. Cram it into a bullet blender (best), or regular blender with the broth and salt, and blend until creamy. You may need to shake or scrape it down a few times, but it’s worth it to keep the thickness. Serve hot.
