Weekend Scramble

On the weekends, I used to love to have fancy breakfasts, and I kind of missed that when I started IP. SO - now I flip my protein meal and have it for breakfast at least one day on the weekends.  That means you eat packets for the remaining meals - so if you have to go out, this may not work. Just plan ahead and make sure. :) 

  • 1 c sliced mushrooms
  • 1/2 c chopped onions
  • 1/2 c chopped peppers, spinach (or other desired veggie)
  • 2 eggs - whipped
  • 1/2 tsp Ideal Salt and/or seasoning salt
  • 2 oz lean low fat ham - chopped
  • 2 Tbs chopped green onion
  • Nonstick olive oil spray

In a large frying pan, spray lightly with nonstick olive oil spray and saute veggies and ham till tender and heated through (don't carmelize onions).  While those are cooking, whip eggs and season with sea salt and/or  seasoning mix (i.e. Spike).

When heated, scoot veggies & ham to the side of the pan, add a little more nonstick spray and pour eggs in to begin scrambling. When eggs are about half-cooked, mix with veggie/ham mixture.  Cook to desired doneness & serve hot!  Sprinkle fresh chopped green onions on top
